These varieties produce a highly stable cooking oil, given that olive oil is the only oil capable of withstanding temperatures up to 180ºC without decomposing or losing any of its properties, contrary to other vegetable oils. Moreover, Olive Oil used for frying can be reused on various occasions.
Not only is olive oil safer to use when it comes to cooking, but it also has proven culinary advantages: the frying process is much faster the higher the temperature, meaning that food retains its nutritional value better.
